Fried Rice of Mrs. Hanh


  • 2 cups cooked rice
  • 200 gr chopped pork
  • Onion
  • Purple onion
  • Jew’s ear, thin-top mushroom
  • Spice: salt, pepper powder, lemon, fish sauce, sugar, chili
  • Small spring onion
  • Dried Onion
  • Vegetable oil or soy oil
  • Herb




  • Put the thin-top mushroom into a bowl of hot water to soak, then cut their stipites and slice thinly their hats
  • Wash onions under running water to free them of dirt and grit, then trim the root end slice them thinly
  • Season the chopped pork with pepper powder and salt
  • Chop onions

Step 2:

  • Preheat the wok to medium high heat. Put the vegetable oil into the pan. Add the pork until browned
  • Peel off the purple onion, slice them and put them into the pan, add the thin-top mushroom, jew’s ear, onions, pork for 5-7 minutes. Then put the cooked rice into the pan and mix them together. Add the fish sauce or salt and the small spring onion to the mixture and toss them

Step 3:

  • Remove the pan from the heat. Place the rice in a dish and garnish it with the herb and the dried onion
  • Taste this dish with the sauce “nuoc cham”, the salade of Mrs. Hanh and the mushroom omelet
